Gio'sのクリエイティブな発想の源は、シェフのジョヴァンニ・デ・トラーナにあります。ジョヴァンニは若い頃からシェフとして活躍し、ミラノにあるブルガリホテルやシャングリラホテル東京など、世界でも有数のホテルで経験を積んできました。

ジョヴァンニは、自身が生み出す料理の品質への揺るぎない信念を持っています。地元の食材を最も新鮮な状態で調達し、見事な料理を綿密に仕上げていきます。彼の卓越した献身さは料理から溢れ出ています。
